Chicago in a Jar

First Tracy Shutterbean posts it. Then Martin emails it to me. It was fated: I had to make giardiniera.

It was actually the perfect excuse to visit the Dallas Farmers Market. I’d been wanting to check it out since before I moved here and now that I needed a ton of veg, I just had to go. The Market was everything I ever imagined. So huge! Tons of vendors and each stall had a guy or gal standing there with samples. They were practically begging me to try their tomatoes, grapefruit, whatever. Um, you had me at howdy.

I sort of morphed the two recipes and made my own thing. This is mostly because I didn’t want a gajillion jars and was just guessing with most of the measurements. Even still, I had  a lot of fresh veggies left over. No worries, my daily lunch salad had lots of extra umph this week. Forgive me for not giving you the precise recipe I used, but “a handful of onions” wouldn’t be very helpful, I don’t think. But follow Tracy or the Chicagoist that I linked & you’ll be golden.

Now I just have to buy some Italian beef & I’ll really feel like I’m back in Chicago!
