vegetarian dinner party & movie

Sometimes I’m a homebody. Which works out well when you’re roommates with other people who find the value in a quiet evening in. However, living alone puts a damper on that happening too often. There’s just something pathetic about movie and wine at home alone too often.
So, I was talking to my friend Amanda about our weekend plans & we both were like, “Let’s just take it easy.” Score. We decided on homemade dinner and a movie. After some internet perusing, we found some great veggie dishes that looked easy but delicious: baked mac and cheese & sweet potato cakes. I can’t decide which was my favorite, they were both just so tasty. Even if you’re not vegetarian, make these dishes-they’re divine.
Amanda invited her roommate and another friend, so this officially counts as our first dinner party of the year (resolution check). After we were full to the brim, we watched some Ben Affleck action in The Town. I’d never even heard of it before but quite enjoyed it. Amanda used to live in Boston and the movie just made me want to visit. Hmm, maybe I can wrangle in a trip sometime this year….
